These wraps have takeout “chicken kebab” and “chicken gyros” vibes, but you can easily make them using simple ingredients at home! Caramelised chicken and zingy, fresh tzatziki are stuffed into wraps with tomato, parsley and red onion. The chicken is flavoured with a delicious oregano, lemon and garlic marinade that works on absolutely everything.

Ingredients

Chicken

  • 500 g boneless, skinless chicken thighs, trimmed
  • 1 tsp freshly minced garlic
  • 3 tsp fresh lemon juice
  • 1 tsp sea salt flakes
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tbsp brown sugar
  • ½ tsp freshly cracked black pepper
  • 3 tbsp olive oil

Tzatziki

  • 1 small cucumber, grated and excess juice squeezed out
  • 1 tbsp finely chopped fresh dill
  • 1 tbsp finely chopped fresh mint
  • 250 g plain Greek yoghurt
  • 1 tbsp fresh lemon juice
  • ½ tsp freshly minced garlic
  • ½ tsp sea salt flakes

To Serve

  • 4 wraps (try homemade 2-ingredient flatbread)
  • 7 g roughly chopped fresh flat-leaf parsley
  • 2 tomatoes, grated and excess juice squeezed out
  • ÂĽ red onion, sliced

Method

  1. Combine the chicken ingredients in a large bowl and mix to combine using your hands or tongs so that the chicken is evenly coated in the marinade.
  2. Combine the tzatziki ingredients in a separate bowl and set aside.
  3. Heat a large heavy-based frying pan over medium–high heat and cook the chicken for 10–12 minutes or until cooked through and golden. Turn regularly during cooking and add ½ cup of water in the final 2 minutes of cooking to deglaze the pan.
  4. Slice the chicken into strips and toss it through the juices in the pan.
  5. Serve the wraps topped with tzatziki, parsley, tomatoes, red onion and the cooked chicken.

Tips

  • If you have time, marinate the chicken for up to 24 hours prior to cooking for more intense flavour.
  • The raw chicken in the marinade can be frozen for up to 2 months. The tzatziki keeps for 3 days refrigerated.
  • You could also pair the chicken with hummus, pesto and mayo, or avocado and feta.
  • This chicken is also great cooked on the barbecue over medium–high heat for 8–10 minutes.
