
Chicken Caesar Smash Tacos

Crispy smashed chicken caesar tacos with all the flavours of a classic caesar salad — tender chicken, creamy caesar dressing, crispy bacon, parmesan and crunchy cos lettuce, all packed into warm tortillas.
Ingredients
- 500 g boneless, skinless chicken thighs
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- ½ tsp sea salt flakes
- ¼ tsp freshly cracked black pepper
- 1 tbsp olive oil
- 8 small flour tortillas
- 1 cos lettuce, finely shredded
- 150 g bacon, cooked and crumbled
- 100 g parmesan, shaved
- Cherry tomatoes, halved
Caesar dressing:
- 125 ml mayonnaise
- 1 tbsp dijon mustard
- 1 tbsp fresh lemon juice
- 1 tsp Worcestershire sauce
- 1 anchovy fillet, minced (optional)
- 1 clove garlic, minced
Method
- Season the chicken with garlic powder, onion powder, smoked paprika, salt and pepper.
- Heat olive oil in a large frying pan over medium-high heat. Cook the chicken for 5–6 minutes each side until cooked through. Rest for 5 minutes, then slice.
- Mix all the caesar dressing ingredients together in a small bowl.
- Warm the tortillas in a dry pan or microwave.
- Assemble tacos: spread caesar dressing on each tortilla, add shredded cos lettuce, sliced chicken, crumbled bacon, shaved parmesan and cherry tomatoes.
- Fold and serve immediately.
Tips
- For extra crispy chicken, smash the cooked chicken pieces flat in the pan with a spatula.
- The caesar dressing can be made up to 3 days ahead and stored in the fridge.
- Swap chicken thighs for breast if preferred.
- Add croutons for extra crunch inside the tacos.
