Crispy smashed chicken caesar tacos with all the flavours of a classic caesar salad — tender chicken, creamy caesar dressing, crispy bacon, parmesan and crunchy cos lettuce, all packed into warm tortillas.

Ingredients

  • 500 g boneless, skinless chicken thighs
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp sea salt flakes
  • ¼ tsp freshly cracked black pepper
  • 1 tbsp olive oil
  • 8 small flour tortillas
  • 1 cos lettuce, finely shredded
  • 150 g bacon, cooked and crumbled
  • 100 g parmesan, shaved
  • Cherry tomatoes, halved

Caesar dressing:

  • 125 ml mayonnaise
  • 1 tbsp dijon mustard
  • 1 tbsp fresh lemon juice
  • 1 tsp Worcestershire sauce
  • 1 anchovy fillet, minced (optional)
  • 1 clove garlic, minced

Method

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt and pepper.
  2. Heat olive oil in a large frying pan over medium-high heat. Cook the chicken for 5–6 minutes each side until cooked through. Rest for 5 minutes, then slice.
  3. Mix all the caesar dressing ingredients together in a small bowl.
  4. Warm the tortillas in a dry pan or microwave.
  5. Assemble tacos: spread caesar dressing on each tortilla, add shredded cos lettuce, sliced chicken, crumbled bacon, shaved parmesan and cherry tomatoes.
  6. Fold and serve immediately.

Tips

  • For extra crispy chicken, smash the cooked chicken pieces flat in the pan with a spatula.
  • The caesar dressing can be made up to 3 days ahead and stored in the fridge.
  • Swap chicken thighs for breast if preferred.
  • Add croutons for extra crunch inside the tacos.
